Larry Cherubino’s meteoric rise from starting in his spare room in 2005 to James Halliday’s Winery of the year in 2011, is continuing to evolve the wines of Western Australia’s Margaret River with the introduction of new varietal and styles.
His Pedestal vineyard sits at the highest point of the Wilyabrup Valley, the vines face south, so they don’t see much afternoon sun giving the vines more time to develop their fruit, making a more delicate yet still intense style of Cabernet. The vines are 20 years of age and are planted on iron rich loam over free draining gravel, which warm up quickly in the spring, ideal for ripening Cabernet.
In the glass the colour is deep with a nose of blackcurrants, with leafy aromatic notes, in the mouth the tannins are soft with bramble and mulberry fruit, with hints of mint and chocolate. This is drinking beautifully and has a few years in hand too.
