On a small dirt track off the main D974 road in Gevrey-Chambertin, a small cellar lies hidden just behind a supermarket. Whilst this garage-like cellar is far from glamorous, it is where Mark Haisma, former winemaker at Yarra Yering in Yarra Valley, Australia, has been crafting beautifully balanced wines since 2007.
Mark chooses parcels of vines which he selects based on the quality of the site, the rigour of the grower’s viticulture and the health of the fruit. He has built up trusted relationships with vignerons which allows him the choicest selection of their grapes and his own team of pickers ensure the fruit is harvested and transported speedily and in the best condition to the winery.
The village of Saint-Romain is the highest in the Côtes de Beaune whose vines in the days gone struggled to ripen unless in exceptional years. Now with Global Warming these high lying sites are blossoming into potentially exciting areas offering great value
