Description
Cederberg is situated high up in the Cederberg Mountains 250 kilometres north of Cape Town, at 1036m making it the highest vineyard in the Western Cape.
With a cool continental climate, diverse soil types, free of viruses, Cederberg has been the home to the Nieuwoudt family since 1893. David Nieuwoudt, 5th generation, is one of the top winemakers in South Africa crafting complex elegant pure white wines and fruit driven, beautifully balanced reds.
The Sauvignon Blanc grapes are hand-harvested in the early morning. The winemaking process is done in reductive conditions using dry ice and carbon dioxide gas. Grapes are crushed at 8 °C with approximately two to four hours of skin contact before a light pressing. Two days of juice settling is followed by racking and the addition of selected yeast. Fermentation is at 11 °C for approximately 24 days. Finally, the wine is further matured on the fine lees for an additional four months with a monthly bâtonnage before the final blending and bottling.
