Description
Jean-Baptiste Ponsot is the third generation to run this small Domaine in Rully in Burgundy’s Côte Chalonnaise. He farms his 8.8 hectare estate sustainably without using any pesticides or herbicides.
Jean-Baptiste has been renting the 25 acre La Fosse vineyard since 2006. He tends to leave the grass between the vines here to reduce yield of these old vines, planted in 1969.
Careful fruit selection in the vineyard and the cellar before adding his yeast of choice and a cold soak for 4-6 days, gradually increasing the temperature to 27-30° for the maceration and fermentation with either pumping over or punching down depending on the vintage. The wine is then passed into barrel for the malolactic fermentation and a further 12 months, mostly bottled by December.
Pale coloured with complex and elegant Pinot fruit on the nose and palate with a long mineral imbued finish
