Description

Miles established up his winery in 2004 having worked for many years as the winemaker at Tokara in Stellenbosch.

His classy Bordeaux blend called Max, is named after his son, and is a blend of 59% Cabernet Sauvignon, 25% Merlot, 11% Petit Verdot and 5% Cabernet franc from specially selected vineyards in and around Stellenbosch.

The grapes are picked at optimum ripeness and hand sorted before being partly crushed and passed to a mix of open oak and stainless steel fermenters for a cold soak before fermentation begins, using only the natural yeasts, so this can take up to 14 days. Colour is extracted by pumping over and punching down the cap before pressing in a vertical press and running ito French oak barriques of which 40% are new for 22 months, bottled without filtration or fining.
