Description
Simpson’s Rabbit Hole Vineyard is planted with a low yielding Burgundian clone of Pinot Noir, Clone 115. The grapes are hand picked and destemmed before fermentation that takes place in tank lasting two weeks. The wine is racked into two year old French oak barrels for its malolactic fermentation and three months further aging. The wine is juicy with dark cherry fruits and ripe tannins and perky acidity, drinking well but this could keep a few years too.
Simpsons Wine estate was founded in 2014 by Charles and Ruth Simpson in the stunning Elham Valles in Kent’s North Downs. With experience of running another property in France’s Languedoc region, they chose three high lying, mostly frost free, south facing sites and planted with Chardonnay, Pinot Noir and Pinot Meunier to produce still and sparkling wines.
