Description

Wiston, situated near Worthing on the South Downs, has been in the Goring family since 1743. The first vines were planted by Harry and Pip Goring in 2006, 16 acres on a south facing chalky escarpment. The estate has since doubled in size and Harry and Pip have been joined by their son Rick who has taken over the running of the winery. The winemaking is handled by husband and wife team Marcus and Meg Rayner-Ward

Wiston’s excellent yeasty and biscuity Brut NV is made up from a blend of 34% Chardonnay, 33% Pinot Noir and 33% Pinot Meunier. Grapes are hand harvested in late autumn, and the different varieties are pressed separately as whole bunches. The juice is fermented in stainless steel tanks before being allowed to rest on its yeast lees for eight months, before being bottled the summer following harvest. At bottling, a portion of reserve wines (which date back to 2008) is added to make up 20-30% of the final blend. The wine then undergoes slow secondary fermentation in bottle, and is kept on its lees, at a cool 9-11°C for three to five years, allowing it to mature and take on flavours and structure. After several years of ageing the bottles are riddled and disgorged, with a dosage of 8g/l.
