Cape Mentelle is one of Margaret River’s ‘founding five’ wineries, started by David Hohnen and his brothers Mark and Giles in 1970, planting 16 hectares of vine in what is known today as the Wallcliffe vineyard part of the source for this wine. David then went on to New Zealand founding Cloudy Bay. The estate now belongs to Paragon Estates, part of the Endeavour Group.
The winery is run highly sustainably by WA born David Moulton aided by French, Bordeaux trained, winemakers Coralie Lewis and Camille Bru. Cover crops are grown as green compost and to aid insect biodiversity and they make their own compost from grape pomace and chipped vine cuttings.
The grapes are sourced from Cape Mentelle’s two Cabernet vineyards, the original Wallcliffe vineyard and the Trinders Vineyard added in 1988. The bend is 95% Cabernet Sauvignon, 3% Cabernet Franc 1% Petit Verdot 1% Merlot. Each vineyard parcel is destemmed and lightly crushed and macerated in closed fermenters with selected yeasts for up to 24 days. Each batch is basket pressed and assembled within 6 months. A further 15months aging takes place in French oak barrels, 26% new and bottled without fining and a light filtration in September 2021.
