Description
Corteforte was founded by Carlo Maria Cerutti in 1989, with cellars in a 15th century fort in the town of Fumane just to the north of Verona. His organic vineyards spread over the hill above the property.
For the Ripasso the grapes are picked in two passes for maximum ripeness and pressed straight away, fermenting in small batches until the sugars are exhausted with frequent pumping over, to obtain a perfect extraction of the fruit’s aromas and flavours.
In April of the following year, the wine is pumped over the skins of their Amarone which had just been pressed, a small refermentation takes place adding colour, aromatics, body and a tiny amount of extra alcohol, known as Ripasso.
With good colour in the glass, with a nose and palate of sweet cherries and plums with hints of bitters, herbs and dark chocolate, drinking beautifully.
