Tachino’s Moscato d’Asti is one of the very best with a classy floral peachy nose and hints of orange to the fresh, Muscat fruit, a lovely summer aperitif or perfect with cake!
The Tacchino winery was founded in Castelletto d’Orba, in Piemont’s Alto Monferrato region, around the second half of the last century. The winery is run by brother and sister Alessio and Romina, Alessio handles all things vinous and Romina looks after sales and exports.
The Muscat grapes are whole bunch pressed to avoid oxidization, filtered and held at -3°c until they are required. Each batch is then passed to an autoclave, a sealed tank with a valve to release CO2. The must is heated and yeast is added to start fermentation. Just before the required alcohol (5%) the CO2 valve is closed, trapping the gas in the wine. The lightly sparkling wine is then chilled again and carefully filtered to remove any yeast and bottled with a cork.
