Jean-Marc Pillot’s excellent village Chassagne-Montrachet has a lovely balance between freshness and richness of fruit with complex oak, drinking beautifully now but will keep well too.
Jean -Marc Pillot is the 6th generation to run this estate, he began working with his father Jean in1985 taking over with his sister Beatrice in 1991. They have since expanded the Domaine to 11 hectares unusually for Chassagne split 50/50 red and white. Jean-Marc’s priority is the work in his vineyards, Organic fertilisers are adapted to the needs of each vineyard and the specific nature of each plot. Sustainable methods are used to fight against fungal diseases with maximum respect for the vines and their environment. The wines are fermented and aged in oak casks 30% of which are new and aged for 12 months with a further 6 in tank before release.
