Description
This stunning old vine Chablis come from vines plated in the 1950’s and 1960’s in a 7 hectare site to the north east of Chablis near the village of Fontenay-prés-Chablis. The soil there is pure Kimmeridgian, (a 150-million-year-old mixture of limestone, clay, and fossilized marine organisms (notably Exogyra virgula oysters) dating from the Jurassic period) coupled with the old vines this makes for a stunning, textbook Chablis. The wines have long aging on their lees in stainless steel and 10% old oak.
Nathalie and Giles Fèvre run this old family Domaine, Nathalie handles the wine making while Gilles tends the 50 hectares of vines. They have recently been joined by their daughter Julie, herself a qualified agricultural engineer and oenologue.
