Description
Paul Dethune’s stunning Cuvée à l’Anciénne is a throwback to the wine making of the past in Champagne.
The fruit comes from Dethune’s own organic vineyards, 50% Chardonnay from the Les Secs vineyard, chalk soils strewn with rocks giving great intensity and minerality, and 50% Pinot Noir from the Les Crayères vineyard, with deep chalk soils giving richness and power, two of the most sort after sites in the Grand Cru Village of Ambonnay.
The grapes are gently pressed and run into 210lt casks made from oak grown in Champagne for the first fermentation and aging before bottling and further aging on its lees for over 8 years. After disgorgement the wine is sealed with a cork wrapped and knotted with hemp string a method used in the 19th century before the wire cage was invented.
To open keep your thumb on top and snip the four strings with scissors and gently twist the cork as usual – enjoy!
