Ivo's Chardonnay 'Serastro', each vintage he renames his wines according to their mood and style, comes from vines in the Thracian Lowlands region and is aged for 12 months in French and Bulgarian 600ltr oak barrels; very interesting, full flavoured with complex buttery peachy notes tempered by minerality and lemony acidity.
The late great Steven Spurrier called it 'a serious Chardonnay, comparable in vineyard expression to 1er Cru from the Côte de Beaune' so well woth a try.
